Yoghurt and cucumber dip

This dip is perfect for a light dinner or a quick snack. Pair it with lavash, crackers or pita bread.

Ingredients:

2 cucumbers (grated) 250 gm greek yoghurt 30 gm chopped walnuts 2 tbsp raisins 1 tbsp dried mint Salt and pepper

Method:

Place all ingredients in a bowl and mix well. Serve as a side dish or a dish with crackers.

Low carb pancakes

In the mood for something healthy yet tasty? These pancakes may be just what you need.

Ingredients:

1 cup almond flour 1/2 tsp baking powder 3 large eggs 1/4 cup milk 1 tsp vanilla extract or essence

Method:

  • In a medium bowl, whisk together the almond flour and baking powder. Set it aside.
  • In another medium bowl, whisk together the eggs, milk, and vanilla extract. Stir in the almond mixture until well combined. Let the batter sit for 10 minutes before cooking.
  • When ready to cook, heat a nonstick pan over medium heat. Using a measuring cup, scoop 1/3 cup of batter onto the skillet. Cook the pancake until the bottom is golden, about 3 to 4 minutes. Flip the pancake and continue to cook until the remaining side is golden, about 30 seconds to 1 minute. Remove the pancake from the skillet and repeat this process until all of the batter has been used up.

Black Sesame Chicken

Craving some delicious Asian chicken with rice? This dish is definitely a must-try.

Ingredients:

50 ml dark soy sauce 50 gm black sesame seeds 125 gm honey 8 chicken skinless thigh fillets 300 gm Basmati rice Salt

Method:

  • Preheat the oven to 200°C/180°C fan/gas mark 6.
  • Place the soy, sesame seeds and honey into a small saucepan and bring it to a boil. Boil for a few minutes until well mixed, then add a pinch of salt and stir through.
  • Place the chicken thighs into a roasting dish and pour over the sauce. Coat the chicken pieces well, then roast in the oven for 30 minutes, uncovered.
  • While the chicken roasts, cook the rice. Rinse the rice well in a sieve under cold running water until the water runs clear. Tip the rice into a saucepan and cover with water – you need it to be a good 2 cm above the surface of the rice. Add a pinch of salt and 1 tablespoon of oil, then bring the pan to a boil. Once boiling, reduce the heat to low, cover the pan with a lid and gently cook the rice for 10 minutes. Remove from the heat–don’t even think about taking the lid off–and leave to rest for a good 10 minutes more.
  • Leave the chicken in the roasting tray and pour the sauce into another saucepan. Bring the sauce to a boil and reduce it until it’s a little thicker and stickier. Pour it back over the meat, then serve the sticky chicken over the rice, and do feel free to add extra sauce and seeds.

Tomato and spinach pasta

Toss up this flavourful pasta in 30 minutes with 5 ingredients that are lying in your fridge. For a vegetarian version of the same, you can replace the sausages with tofu or paneer.

Ingredients:

1 cup uncooked red lentil pasta (or pasta of choice) 2 turkey or chicken sausages 1/2 can of seasoned diced tomatoes or fresh tomatoes 1/2 cup red onion (diced) 2 handfuls of spinach Salt

Method:

  • Cook pasta according to package directions.
  • Meanwhile, in a large frying pan, cut the sausages, add onions, and cook on medium heat for about 15 minutes.
  • Add tomatoes and salt, mix well, then add cooked pasta, and heat for another 3-4 minutes.
  • Turn off heat, mix in spinach and allow to wilt slightly. Serve and enjoy!
  • Optional add-ins: red pepper flakes, Parmesan cheese, nutritional yeast.

Parle G vanilla cake

Tasty yet so easy, you need to try making this cake to actually believe how simple it is.

Ingredients:

300 gm Parle G biscuits 1/2 cup sugar 1/2 tsp baking powder 1 cup milk 1 tsp vanilla 1/4 cup walnuts

Method:

  • Preheat the cooker for 10 minutes without the whistle on a medium flame. Roughly break the biscuits and add it to the food processor along with the sugar. Blitz until there are no chunks remaining and it's a homogenized fine mixture.
  • Transfer the biscuit mixture to a glass bowl, add in the baking powder and mix well.
  • To the bowl now add the milk and the vanilla. Mix until everything is well combined and the batter looks nice and smooth. Add the walnuts now and fold in gently.
  • Generously grease the 4’ inch baking pan with oil or butter. Line it with a parchment paper or dust it with flour.
  • Transfer the batter in the pan and carefully place this pan in the cooker on top of the wire rack. Close the cooker and cook the cake for 45-50 minutes until a skewer inserted comes out clean.
  • Once done cooking, carefully remove the cake and let it cool completely before unmolding.
