Pune is known for their typical Maharashtrian recipes. One such delight is the famous mastani milkshake. The mango mastani in particular is Pune’s own special creation for summer. It is a thick mango milkshake, topped with delicious ice-cream and nuts. This milkshake gets its name from the famed Peshwa ruler Bajirao’s lover, the beautiful Mastani. The name was an ode to Punekars’ proud cultural heritage. Talking about his love for Pune, Executive Chef Prasad Metrani of Fairmont Jaipur says that the mastani is one refreshing drink that he keeps going back to, to gain respite from the scorching heat of Jaipur. Mango Mastani

Ingredients

100gms mango pulp 100gms sugar 200ml milk 2 scoops of mango ice-cream A pinch of cardamom powder Almond flakes for garnish Silver varq for garnish

Method

Mix mango pulp, sugar and milk in blender to make mango milkshake. Defreeze it for 15-20 mins. Now again blend it well. This will make the milkshake thick. Add mango ice-cream scoops. Dust with cardamom powder. Garnish with almond flakes and silver varq and serve chilled.

Rose & Arrak Mastani

Ingredients

2 cups chilled milk 3tbsps sugar 1/2 tsp rose syrup 2 scoops rose petal ice-cream 20ml arrak (fennel flavoured Arabic drink) Fresh rose petals for garnish

Method

Pour milk in a jug, add sugar and mix well with rose syrup. Pour the mixture in a blender. Add 1 scoop of rose petal ice-cream and blend the ingredients. Pour the blended mixture in a serving glass, and chill for 30 minutes. Add a scoop of rose petal ice-cream at the time of serving. At base of the glass, add arrak and pour the drink on top of it. Garnish with fresh rose petals

Orange Blossom Water Mastani

Ingredients

100gms orange syrup 25ml orange blossom water (Arabic Essence) 200ml milk 2 scoops orange ice-cream A pinch of orange rind Almond flakes for garnish Cashew nuts toasted for garnish Pistachio finely chopped & mixed with ice cream Silver varq for garnish

Method

Pour milk in a jug, add sugar and mix well with orange syrup. Pour the mixture in a blender. Add 2 scoop of orange ice-cream and blend the ingredients. Pour the blended mixture in a serving glass, and chill for 30 minutes. Add a scoop of orange ice-cream at the time of serving, mixed with the finely chopped orange rind, finely chopped pistachio and desired/mentioned quantity of orange blossom water.
