You may not be able to take her out for a lavish meal this year, but you can still make her day extra special at home. We suggest taking over the kitchen to cook her a scrumptious brunch - it's a great way to get everyone together for a meal, and it'll give her a break from the kitchen too! Don't know where to start? We've got your back. Ahead, we've curated a list of fun brunch recipes you can try out, and listed some tips on table setting to help you set the right mood.

Delectable Pancakes

Start off on a sweet note with these delicious raspberry pancakes by Unforgettable Vegan. These pancakes are vegan and so healthy.


1 cup almond or any vegan flour
¼ cup protein powder (of your choice)
1-1½ cups water
1 tbsp baking powder
½ tsp salt
1 to 2 tbsp sweetener of choice


  • Mix the ingredients in a bowl until light and fluffy. The batter should be thick.
  • Grease the pan with your preferred oil or butter. Lay the batter on a pan. Flip it when you see bubbles rising on the side. Fry till golden.
  • Top with honey, vegan chocolate or peanut sauce and all of your mum’s favourite fruits.

Garden Vegetable Quiche

This tasty café style quiche by The Recipe Girl is guaranteed to impress your mother. Filled with veggies and covered with a crispy crust, this is a must-have recipe for your brunch table.


2 tbsp butter
1 medium onion, chopped
2 medium garlic cloves, minced
10 whole mushrooms, sliced
2 tbsp all-purpose flour
1 tsp cayenne pepper
1 tsp salt
1 tsp dried basil (or 1 tablespoon chopped fresh basil)
4 large eggs, beaten
2 medium carrots, shredded
1½ cup half and half cream
1½ cup shredded Swiss cheese
10 whole asparagus spears, trimmed
1 medium tomato, sliced into quarter-inch rounds
Chopped fresh parsley


  • Preheat the oven to 375°F. Melt the butter in a non-stick skillet. Add onions, garlic and mushrooms to pan and cook for 8 to 10 minutes until soft.
  • Add the flour,½ tsp cayenne pepper, salt and basil to the pan and cook for an additional 3 to 5 minutes. Remove from heat and set aside.
  • In a large bowl, whisk the eggs with cream, ½ cup cheese and carrots. Add the mushroom/onion mixture to the egg/cheese/carrot mixture and stir to combine.
  • Slice 5 asparagus spears into one inch to two inch pieces. Lay the asparagus pieces on the bottom of the pie shell. Pour the filling over the asparagus in the pie shell.
  • Place the pie pan on the cookie sheet and bake for 20 minutes. Remove from the oven.
  • While the quiche is baking, slice the remaining asparagus spears into one inch to two inch slices or leave them five inches long for a decorative design. Arrange tomato slices and asparagus pieces on top of the quiche in a wagon-wheel pattern or another attractive pattern.
  • Return the quiche to the oven and bake for an additional 20 to 30 minutes or until the quiche is firm to the touch and a knife inserted into the centre comes out clean.
  • Sprinkle the quiche with the remaining ½ cup shredded cheese and parsley. Bake for an additional 10 minutes. Remove from the oven. Let it cool before slicing.

It’s one of the most popular egg dishes that you can eat for breakfast, brunch, lunch or dinner. This recipe from FatMowCooking is a Mexican take on the dish - perfect for the Indian palate.


1 tin chopped tomatoes
½ can water
1 tsp garlic
¼ red chilli
½ tsp coriander
¼ tsp chilli powder
½ tsp oregano
½ tsp cumin
1 tsp smoke paprika
½ tsp onion powder
½ white onion, julienne
½ red pepper
4 cherry tomatoes, halved
4 eggs
Salt and pepper
Coriander for garnish


  • Fry the onion and pepper on a high heat until they start to soften and char. Once this happens, add in the garlic, chilli and spices and cook further for a few mins.
  • Add the halved tomatoes and then the tinned and water and stir. Simmer for about 10 mins until it starts to reduce.
  • Make 4 wells and pop in the egg, then place a lid on the pan and cook until the eggs are done! Season throughout and garnish with the coriander.

Vegetarian Basil Pesto Pasta

This dish by Lovely Delites has got to be one of the tastiest and easiest pasta recipes out there. It is also vegan and nut-free, so you can proudly tell your mother you're serving her healthy food. If you’d like, you can add some pecan nuts to the recipe.


For the pesto sauce:
2 cups of fresh basil
2 garlic cloves
2 tbsp fresh lemon juice
¼ cup extra virgin olive oil
Salt and pepper to taste


  • Add all the ingredients to your food processor and blend until smooth. Mix it with the cooked pasta of your choice.
  • Serve hot and garnish with basil leaves.

Vegan Chocolate Mousse

A healthy take to chocolate mousse, this Plant Based recipe won’t disappoint. Use the best quality dark cocoa powder available for a rich taste.


6 fresh dates
1 cup coconut milk
1 tbsp peanut butter
1 tsp coconut sugar (or your preferred sweetener)
3 tbsp cacao powder


  • Mix all the ingredients in a blender. Freeze for 30 minutes (or more if you like it thicker).
  • Serve with peanut butter and coconut milk, or anything else you prefer.

A Delicious Mimosa Cocktail

Treat your mum to a chilled and refreshing cocktail like this strawberry mimosa from Mr. Boston Official. It’s easy to make and she’ll love it. You can also make it minus the champagne.


½ cup frozen sliced strawberries in syrup or strawberry syrup, partially thawed
60 ml fresh orange juice
120 ml chilled Champagne or sparkling wine
1 orange, cut into half-wheel slices
1 whole strawberry


  • Process strawberries and orange juice in blender until smooth. Pour into ice-filled hurricane glass. Fill with Champagne.
  • Garnish with orange slices and the strawberry.

For The Table Setup

Take out the fine cutlery and flatware for this special day. For a basic setting, place the plate in the centre. The fork and napkin should be placed to the left of the plate. Any other flatware goes on the right side. To the upper left of the plate, place the wine or juice glass. The cup and saucer are placed to the upper right.
