No one ever needed a reason to eat pizza, but here’s one anyway—it’s Pizza Day! You now have a legit excuse to skip the diet and bite into some delicious carbs topped with a gooey layer of cheese. But crispy crust and cheese aside, there’s so much more you can do with your pizza. There are endless ways to make it special and we picked one by Chef Sunny Punjabi of Dishkiyaoon, Mumbai. He brings to this pizza a curious mix of toppings that will put pineapples on a pizza to shame and will waken up your taste buds to a burst of Thai flavours. Enough said! Name: Thai Chicken Pizza

Toppings:  Peanuts, Thai spiced grilled chicken, bean sprouts



80gm pizza dough 15gm Thai red curry paste 30ml coconut milk Peanuts (roasted & crushed) 10gm scallions (julienne) 30gm chicken leg boneless 1gm kaffir lime 1gm lemongrass 10gms carrot (julienne) 5gms red onion 2gms basil 80gms mozzarella shredded 2gms cilantro 5gms bean sprouts 5gms ginger garlic paste 5gms red chili paste  


Roll the pizza dough and blind bake in the oven at 160 degree. Marinate the diced chicken with half red Thai curry paste, red chilli paste, ginger garlic paste and grill it till juicy and tender. Make Thai curry using the remaining Thai paste, kaffir lime, lemon grass, coconut milk and make a thick curry to top as a sauce on the blind baked pizza base. Arrange the grilled chicken pieces on the pizza and top it with mozzarella cheese. Bake till the crust gets crispy and the cheese melts down. Top it with juliennes of carrot, red onion, chopped cilantro and crushed peanuts. Garnish with bean sprouts and scallions.   Serve fresh or even leftover from the fridge from last night.
