It substitutes unhealthy refined ingredients like white flour with whole wheat flour and processed sugar with natural jaggery. Its flavour is further heightened with cinnamon and flaxseed powder, carrots and walnuts to give you a rich Christmas cake essence.


30g flaxseed powder 6 tbsp water 150ml extra virgin olive oil 175g jaggery, grated 1 tsp vanilla essence 225g carrots, peeled and grated 100g walnuts, chopped 175g whole wheat flour 1 tsp baking soda 1 tsp baking powder A pinch of salt 1 tsp cinnamon powder


Preheat the oven to 180°C. Mix the flaxseed powder and water in a large bowl and set aside for a few minutes. Add the oil, jaggery and vanilla essence. Whisk till combined. Add the carrots and walnuts. Mix well again. Sift together the flour, baking soda, baking powder, salt and cinnamon powder in another bowl. Gently fold this into the wet ingredients to form a batter. Spoon the batter into a 7-inch baking pan lined with butter paper. Even out the top.
